Abstract:
PROBLEM TO BE SOLVED: To provide a new chemical substance originating from thermophilic bacteria and having surface activity and provide a method for producing the substance.
SOLUTION: The monoacyltriglycosyl diacylglycerol derivative is expressed by general formula (I) (R groups are each independently H, an aliphatic acyl, an aromatic acyl, phosphate group, sulfonic acid group or sulfonic acid salt group; and R1, R2 and R3 are each independently a hydrocarbon residue derived from a fatty acid). The compound is useful as a surfactant.
