Abstract:

PURPOSE: To obtain the subject healthy and beautiful mousse having a high nutritive value by boiling a leaf of a vegetable, then converting the boiled leaf into a juicy form, adding cow's milk, sugar and salt thereto, heating the resultant mixture, adding gelatin dissolved in water thereto, stirring the prepared mixture, then casting the cooled mixture into a mold and cooling the cast mixture.

CONSTITUTION: Spinach, colored to deep green and having a high nutritive value and strong fastidiousness for children is used as a vegetable and a leaf of the vegetable is washed clean, placed in boiling water and boiled and the boiled leaf is then squeezed and dehydrated. The dehydrated leaf, together with a small amount of water, is treated with a mixer, pulverized and converted into a juicy form. The obtained juicy substance is subsequently placed in a heating container such as a cookpot. Cow's milk, sugar and salt are added thereto and gelatin dissolved in water is added while stirring and heating the mixture at about 80°C. The prepared mixture is sufficiently stirred and then cast into a suitable mold, cooled with a cooling means such as a refrigerator. After solidifying the gelatin, the solidified substance is taken out of the mold into a suitable vessel. Thereby, the objective healthy and beautiful mousse, containing the vegetable and having a high nutritive value due to the use of only the natural material is obtained.
