To provide both a method for multiple surface baking by which baking treatment of many surfaces of a food such as baking of a coating on a Japanese-style confection KINTSUBA (prepared by wrapping Adzuki beans in a nonglutinous rice flour or wheat flour and baking the wrapped Adzuki beans) and a roasted riceball can efficiently and simultaneously be carried out and an apparatus therefor.
A food material F is placed on a firebed 4 in a high-temperature state by each manipulator 2 to bake the surface of the food material F placed on the firebed 4. Pressing metallic plates 5 heated by the heat transfer from the firebed 4 are advanced toward or retreated from the food material F on the surface of the firebed 4 and pressed against the lateral faces of the food material F to thereby bake the lateral faces of the food material F. Since the advancing, retreating and reciprocating pressing metallic plates 5 can be pressed against the food material F to simultaneously bake even the lateral faces of the food material F without baking only the surface of the food material F placed on the firebed 4 thereon as in a conventional method, the baking treatment efficiency can remarkably be improved as compared with that of the conventional method.
