Abstract:

PURPOSE: To obtain potato bread having good taste and improved components by blending potato with wheat flour and adding yeast and subsidiary raw materials to give bread dough.

CONSTITUTION: 1 pt.wt. wheat flour is blended with ≤1.5 pt.wt. calculated as steamed or boiled potato, mashed potato liquid or dried powder potato. The blend is further mixed with 1/5-1/20 pt.wt. subsidiary raw materials such as freeze-resistant yeast and butter and kneaded into bread dough to give potato bread. The bread dough is preserved at -10 to -20°C when frozen and stored.
