Abstract:

PURPOSE: To provide a quality-improver for frozen food and provide a frozen food capable of keeping its softness and moistness, etc., even after the storage in frozen state, resistant to the degradation of palatability, taste and flavor and maintaining the fresh appearance and original shape.
CONSTITUTION: The objective quality-improver is composed of an emulsified oil and fat composition containing 0.5-60wt.% of an oil and fat, 2-60wt.% of an organic acid monoglyceride, 2-30wt.% of an organic acid diglyceride, 0.1-30wt.% of an emulsifier, 0.2-80wt.% of sugar and 10-95.2wt.% of water. The objective frozen food is prepared by using the improver as a component.
