Abstract:

PURPOSE: To obtain a premix of cake dough, containing a specified ratio of a specified solid fat and water, having a specified degree of tackiness, free from formation of a gel and excellent in fineness and shelf life.

CONSTITUTION: This premix of cake dough contains 25 to 35wt.% solid fat having 15 to 25 SFI value at 15 to 30°C, e.g. margarine and 4 to 15wt.%, preferably 4 to 10wt.% water and exhibits 0.02 to 0.2, preferably 0.05 to 0.15 degree of tackiness. In addition, this premix of cake dough is preferably put in a standing pouch and tightly sealed.
