Abstract:
PROBLEM TO BE SOLVED: To obtain a new Bifidobacterium longum strain having high proliferation ability and medium solidification ability even in a reducing skim milk medium containing no proliferation promoting matter.
SOLUTION: This new strain is obtained by the following process: Bifidobacterium longum used in producing fermented milk or the like is inoculated into a reducing skim milk medium containing no proliferation promoting matter and cultured therein at 37°C until the medium solidifies, the medium thus solidified is then inoculated into a fresh reducing skim milk medium and cultured therein until the medium solidifies; the above operations are repeated, and a strain with both high proliferation and medium solidification abilities is screened and then bred to obtain the aimed strain with such both high proliferation and medium solidification abilities that viable cell number exceeds 1×107 cfu/g in 12 h when cultured at 37°C and the medium is solidified within 15 h. This strain can be cultured in a microbicidal medium and therefore used in producing flavorous fermented milk and the like.
