Abstract:

PURPOSE: To obtain a new food raw material from starch of the tuberous root of devil's tongue, having improved palatability and color of conventional KONJAK (jelly made from the starch of devil's tongue) and utilizable as a new food such as a cooking film.

CONSTITUTION: (1) A new pasty food raw material produced by adding refined KONJAK powder, gelatinized starch, natural starch and emulsified oil and fat to a solution of a KONJAK coagulation agent. (2) A process for the preparation of the above new food raw material comprising the addition of refined KONJAK powder, gelatinized starch and natural starch to a solution of a KONJAK coagulation agent, stirring of the mixture and the addition of an emulsified oil and fat to the mixture after leaving standing the mixture. (3) A new food prepared by mixing the above food raw material with a preparatorily cooked ingredient or wrapping the ingredient with the food raw material and thermally coagulating the product having a two-layer structure.
