Abstract:
To establish a method for mass-producing a new enzyme isoamyl alcohol oxides derived from koji fungus, Aspergillus oryzae, in order to permit the industrial production of isovaleraldehyde used as a raw material for synthetic perfumes, medicines, various kinds of solvents or the like by utilizing the enzyme.
The gene encoding isoamyl alcohol oxidase is cloned from koji fungus and the base sequence of the gene is determined. Further, by inserting the gene into a high expression vector, the host Aspergillus oryzae is transformed and the minor enzyme isoamyl alcohol oxidase is produced in a large quantity.
