To produce a conventionally unknown heterooligosaccharide by utilizing a sugar-transfer reaction of an α-amylase (EC 3,2,1,1) which is a hydrolytic enzyme.
The method for producing an oligosaccharide composition comprises reacting the α-amylase with a mixed sugar liquid containing a starch and/or a hydrolyzed product of the starch, and oligosaccharides which are an enzymically hydrolyzed product of a sugar alcohol, a monosaccharide except glucose, or the starch, and which contain the oligosaccharides except the oligosaccharides having the glucose bonded thereto by α-1,4 bond and/or α-1,6 bond. The method for producing an oligosaccharide composition involves reacting a β-amylase or a glucoamylase with the oligosaccharide composition produced by the method. The oligosaccharide compositions are produced by the methods. The heterooligosaccharide is obtained from the oligosaccharide compositions. The sugar composition contains the oligosaccharide composition or the heterooligosaccharide. The food, beverage, seasoning, taste quality-improver, composition for dental health, cosmetic, fodder or composition for shampooing contains the oligosaccharide composition, the heterooligosaccharide or the sugar composition.
