Abstract:

PURPOSE: To obtain lab produced by Aspergillus ustus.
CONSTITUTION: This invention provides lab harvested from a cultured medium by cultivating Aspergillus ustus, a production of lab in which lab is harvested from a cultured medium of Aspergillus ustus and Aspergillus ustus SBT 567 strain which can produce lab. The lab has high curding activity and low protein decomposing activity and expresses higher decomposing activity to β-casein than chimosin dose. The lab is useful to produce cheese, as it has high curding activity and low protein decomposing activity.
