Abstract:

To provide a noodle skin keeping a crisply palatability in daily dishes such as Chinese meat dumpling, spring roll, etc., cakes, etc. even when time passes after roasting or frying or the dishes, etc. are refrigerated or frozen and stored.

This noodle pastry is obtained by using noodle pastry dough comprising ≥5 pts.wt. of oils and fats based on 100 pts.wt. of wheat flour.
