Abstract:
To provide an oil and fat composition for coating chocolate capable of providing the coating chocolate with the following effects 1) to 4): 1) hardly causing cracks, 2) faster solidification speed, 3) hardly causing graining with the elapse of time, and 4) having good melting in a mouth.SOLUTION: There is provided an oil and fat composition for coating chocolate satisfying the following conditions (a) to (j): (a) containing 1 to 15 mass% of X3, (b) containing 45 to 65 mass% of X2U, (c) having a mass ratio XUX/XXU of 0.55 to 1.70, (d) having a mass ratio X2O/X2U of 0.60 or more, (e) having a mass ratio St2O/X2O of 0.10 or less, (f) containing 15 to 50 mass% of XU2, (g) containing 10 mass% or less of U3, (h) containing 10 mass% or less of St as constituent fatty acid, (i) having a mass ratio St/P of 0.34 or less, and (j) containing 30 to 60 mass% of U as constituent fatty acid.SELECTED DRAWING: None
