Abstract:

To obtain an oily composition coated cake having new flavor not inducing swelling of center material such as raisin by preparing an oily composition by mixing oil and fat with sugars, melting the composition by heat, adding cheese and blending, then coating the cheese-added oily composition on an outer periphery of a cake.

An oily composition is prepared by blending oil and fat such as cocoa butter or substituting fat of cocoa butter with sugars containing oligosaccharide. The oily composition is melted by warming at 35-50°C, added with natural cheese and blended. The resultant cheese-added oily composition is coated on an outer periphery of a cake containing raisin, etc.
