Abstract:

PURPOSE: To provide the composition which contains a specific aromatic carboxylic acid (salt) as a taste modifier and a sweetness suppressant and is useful for reducing sweetness without reducing other flavors contained in food and also, without discoloring a food product.
CONSTITUTION: This composition contains a compound represented by the formula (wherein: B is H, a phenyl group, or the like; C is H or a 1-3C alkyl group; D is O or S; R is an alkoxy or alkyl group, or the like; (n) is an integer of 0 to 3; and X+ is H+ or a cation; wherein when (n) is 2, two R substituents are joined together to form a fused phenyl ring such as naphthyl group), preferably such as (±)-2-phenoxypropionic acid, phenoxyacetic acid, or the like, in an amount effective in reducing sweetness and/or enhancing flavor of food. The composition is used preferably in such an amount as to provide a 0.0005 to 0.05 wt.% ratio of the composition to a food product. Such a compound represented by the formula is obtained for example, by allowing phenol to react with a haloalkanoic acid (ester).
