To obtain a new polyphenol oxidase originated from a microorganism and having the optimal reaction pH at an alkaline side pH, useful for oxidizing colored substances, oxidizing polyphenol containing materials, etc., and used for detergents, etc.
This polyphenol oxidase is originated from a microorganism, and has an action to oxidize polyphenols, the optimal pH at a pH of about 9 in an alkaline side pH region above a pH of 8, the optimal reaction temperature at about 70°C, and a mol.wt. of about 60,000 measured by a GFC analysis method. The polyphenol oxidase is useful for oxidizing colored substances, oxidizing polyphenol-containing materials, etc., and is used for detergent compositions, etc. The oxidase is obtained by inoculating Myrothecium roridum SD 3002 (FERM P-15255) belonging to the genus Myrothecium in a culture medium, subjecting the bacterium to a shaking culture treatment at 27°C for 90 hrs, removing the bacteria by a centrifugal method, concentrating the obtained nutritive broth with an ultrafiltration membrane and subsequently allowing the concentrated product to pass through an anion exchange column.
