Abstract:
PURPOSE: To prepare a packaged cheese having controllable quality, water- content, ripening time, etc., and producible without necessitating a pack and a surface-cleaning operation by filling and sealing a cheese curd and ripening the obtained curd packaged in the container in a final marketing package form.
CONSTITUTION: A container having the final marketing package form (preferably gas-unpassable or gas-passable container) and containing sealed cheese curd is ripened as it is or in wrapped state to obtain the objective packaged cheese.
