Abstract:
PURPOSE: To provide pasta for a microwave oven which includes flour, water and liquid eggs, is provided with a specific thickness, is cooked in a short time and shows a satisfactorily hard texture. CONSTITUTION: The desired product is obtained by mixing flour consisting of semolina, durum, konjak, etc., water and liquid eggs consisting of the whole eggs, egg white and an egg white substitute to be 0.015 to 0.070 in thickness. In addition, it is desirable that a final moisture including amount is 7.0 to 11 (wt.)% and solid eggs are 2.0 to 5.5% in the pasta.
