Abstract:
PURPOSE: To obtain a peptide composition which is useful as a medicine having a promoting action on antibody production and an immunopotentiating action, as a food additive and a biochemical reagent.
CONSTITUTION: A whey protein solution containing 10-80wt.% of lactose on the solid basis is treated with a protease under the conditions of pH at 8.0-11.0 and at 50-90°C to give the objective peptide composition with a molecular weight of ≤10,000.
