Abstract:
PURPOSE: To obtain an acidic phospholipase A1, having the function to hydrolyze a phospholipid and produce a lysophospholipid, specific physical properties and a high ratio of conversion into a lyso derivative, excellent in temperature stability and useful for producing, etc., the lysophospholipid of good quality.
CONSTITUTION: This acidic phospholipase A1 has the function to hydrolyze a phospholipid and produce a lysophospholipid, produced by a mold of the genus Aspergillus, further action optimum pH at 4.0-5.0, action optimum temperature of 50-60°C, molecular weight of 32000 and isoelectric point (pI) of 3.0. Furthermore, a lysophospholipid is obtained by treating a phospholipid with this acidic phospholipase A1.
