Abstract:
To provide an oil/fat composition that has a high palm oil content and yet has a moderate plasticity and is excellent in creaming property.SOLUTION: The problem is solved by using a plastic oil/fat composition that is composed of an oil/fat containing a refined palm oil by 60 to 90 wt.% and an oil that is liquid at 20°C by 10 to 40 wt.%, an emulsifier, and water, contains a polyglyceryl fatty acid ester as an emulsifier, has a maximum stress at 20°C of 600 to 1,200 g and has a viscosity at 5°C when cooled from the molten state to 5°C at 2°C per minute of 2,000 to 40,000 mPa-s.SELECTED DRAWING: None
