Abstract:
To provide: polypeptides having transgalactosylation activity; nucleic acids encoding the same; and uses thereof.SOLUTION: There are provided: a polypeptide having transgalactosylation activity, the polypeptide having at least 95% sequence identity to a particular amino acid sequence, consisting of 975 amino acid residues or less, and having the ratio of transgalactosylation activity to β-galactosidase activity of at least 1.5; a nucleic acid encoding the polypeptide; and a cell being able to express the polypeptide; as well as their use, for example, in dairy products.SELECTED DRAWING: None
