Abstract:

PROBLEM TO BE SOLVED: To obtain a powder composition for foam-including food products by using rice flour, and to provide a method for producing the foamed food product from the powder composition.
SOLUTION: The powder composition for sponge-like foam-including food products comprises 100 pts.wt. of rice flour prepared from non-glutinous rice grains, 3 to 12 pts.wt. of baking powder and 0.5 to 2.5 pts.wt. of water-soluble dietary fiber powder, but not containing wheat flour gluten and silk fibroin.
