PURPOSE: To obtain the powdery processed food of Momorodica charantia L., capable of being processed without deteriorating the active ingredients of the Momorodica charantia L., capable of being stored for a long period, free from a bitter taste, and capable of being utilized as a food material for various foods.
CONSTITUTION: A Momorodica charantia L. is washed to remove the seeds and the endocarps contained therein, cut into fine pieces, dehydrated, and then dried in the sun or forcibly into a weight of 12-5wt.% based on the original whole weight of the fine cut pieces. The dried fine pieces are roasted at 60-120°C and then pulverized. Thus, the powdery processed food of the Momorodica charantia L. free from a bitter taste and having a mild taste and a fragrant smell is obtained. When the dried fine pieces are pulverized without being roasted, the green powdery processed food of the Momorodica charantia L. is obtained. These foods can be dissolved in hot water or cold water to utilize as beverages, or can be mixed with other food materials to utilize as food flours, confection materials, etc.
