Abstract:

PROBLEM TO BE SOLVED: To provide a raw material preparation of glucomannan useful for production of a low calorie food.
SOLUTION: This glucomannan is provided in pre-mixed form by uniformly mixing dry powder of glucomannan and calcium hydroxide, sodium carbonate or potassium carbonate in amount of 1.0-1.5 times equivalent of acetyl groups of glucomannan. This premix irreversibly gels by simply dissolving in water and heating.
