PURPOSE: To prepare a base for the instnt pickling, capable of providing a pickling liquid having excellent taste and flavor of rice-bran paste and giving delicious pickles easily, by adding decomposed proteins to rice bran, wheat bran, etc., and fermenting the mixture with lactic bacteria, yeast, and Gram-negaive bacteria.
CONSTITUTION: Conventional decomposed proteins are added to rice bran and/or wheat bran to attain a soluble nitrogen concentration of ≥100mg%. The mixture is mixed with lactic bacteria, yeasts, cultured cells of the above microbials and Gram-negative bacteria, and/or fermented rice bran and/or wheat bran, and fermented by keeping the mixture at 4.4W5.8pH and 15W40°C. The fermentation product is concentrated or dried to obtain granular or powdery product having a water content of preferably ≤20%. The product is optionally mixed with salt or an organic acid, flavoring agent, etc. to obtain the objective base for instant pickling.
