Abstract:

PURPOSE: To prepare a carrot jam free from the smell and fibrous texture of carrot while leaving the orange color of carrot and having glutinousness and luster, by using carrot and plum as raw materials and subjecting the materials to prearrangement, crushing and boiling-down.

CONSTITUTION: For example, 400g of carrot is skinned and steamed. Separately, 100g of plum is boiled in water after removing the harsh taste of the plum and the stone is removed. The carrot and the plum are treated with a mixer to obtain a paste, which is added with 250g of sugar and boiled down to obtain the objective jam.
