Abstract:

PURPOSE: To prepare the titled drink having improved stability with day, soft taste, readily drinkabie, by making an emulsion consisting of cheese, emulsifying matter, natural thickening agent, and water, followed by sterilizing it under heating.

CONSTITUTION: A natural thickening agent, e.g., caraya gum, xanthan gum, etc. is dispersed into water or dissolved in it. 2W20wt% cheese, e.g., process cheese, natural cheese and an emulsifying matter, e.g., glycerol acetic ester, sucrose fatty ester, etc. are added to the dispersion or solution, adjusted to pH at 5.5W7.0, and processed into an emulsion by a homogenizer. The emulsion is sterilized under heating.
