Abstract:

PURPOSE: To prepare an easily regenerable frozen food in a short time, keeping the freshness of the original food, by drying a food to be dried with a far infrared vacuum-drying apparatus at a low temperature keeping the food from freezing.

CONSTITUTION: A food to be frozen is dried as it is or in the presence of a freezing point depressing agent such as table salt, ethyl alcohol and sorbitol at a low temperature between 0°C and the freezing point in a vacuum of preferably about 0.77W360Torr using a vacuum drying apparatus furnished with a far infrared heating apparatus.
