Abstract:

PURPOSE: To obtain a product containing air bubbles having soft taste, by adding collagen hydrolyzed with amylase as foaming agent to a paste made from the starch of "konjak" (devil's tongue), followed by whipping.

CONSTITUTION: Collagen protein or collagen protein blended with the white and casein is hydrolyzed with amylase to give a hydrolyzed food, which is added to a paste made from the starch of "konjak", and the blend is whipped in an overrun value 15W25.
