Abstract:
PURPOSE: To prepare a milk drink resistant to coagulation with acid, by coagulating milk with rennet (an enzyme), and homogenizing the coagulate to a colloidal solution.
CONSTITUTION: Milk is heated to a proper temperature, and mixed with an aqueous solution of rennet. The coagulated milk is homogenized with a homogenizer to obtain a homogeneous colloidal solution containing finely divided gel. It is seasoned, and if necessary, mixed with fruit juice, etc. to obtain the objective drink which can be stored without precipitaion.
