Abstract:

PURPOSE: To prepare powder of miscellaneous dried fish having excellent taste and flavor, by the freeze-crushing and drying of miscellaneous dried fish other than dried bonito, e.g. dried mackerel, dried sardine, etc.

CONSTITUTION: Miscellaneous dried fish such as dried mackerel, saurel, sardine, etc., which may contain the bones, is chilled with liquid nitrogen, crushed with a freeze-crusher to 100W200 mesh, and dried pref. by high-frequency heating.
