Abstract:

PURPOSE: To prepare an oily flavor prepared by heating capable of providing a food with the oily flavor prepared by heating, having good taste and promoting appetite, by denaturaing under heating an edible natural raw material and edible fats and oils in the presence of a blended spice composition.

CONSTITUTION: At least one edible natural raw material selected from the group consisting of an edible material of natural material such as meat of bird or animal, fish meat, etc., an edible material of natural vegetable such as vegetable, grain, spices, mushroom, etc., their hydrolzates, and substances obrained by treting them with an enzyme, and at least one of edible fats and oil, are denaturated under heating at about 60W180°C for about 10 minutes W about 18 hours in the presence of a blended spice composition such as plural kinds of synthetic spice compounds for the edible natural raw material or capable of providing it with flavor or denaturing it, to give a treated substance, from which flavor component-containing fats and oils after denaturation by heating are separated and collected.
