PURPOSE: To prepare a paste product of meat having proper tightness as well as water retention and taste with good mastication, by denaturing only the part close to the surface of a molded meat food preserved with salt, having increased surface area, with an acidic solution.
CONSTITUTION: Salt and other subsidiary raw materials are added to meat, which is ground to give meat preserved with salt. It is molded into a given shape, cut into flaky or thin and long pieces with notches. The meat is brought into contact with an organic or inorganic acid accepted by the Food Sanitation Act, having good taste, or an aqueous solution of their acidic salts by a means such as immersion, coating, sprya, etc., while the meat is molded into a given shape, cut into flaky or thin and long pieces, or extruded from a nozzle so that the surface area of the meat is being increased, and the meat protein of the part only close to the contact surface of meat preserved with salt is denatured. If necessary, the prepared meat preserved with salt is bonded one another, and gelatinized under heating.
