Abstract:

PURPOSE: To prepare ptisan which can be infused in high concentration even with cold water and gives barley water having excellent taste and flavor, by sprouting barley grains, etc., drying and roasting the grain before the emergence of the root.

CONSTITUTION: Raw materials of ptisan, e.g. barley, rye, wheat, etc. are immersed in water and sprouted. Before the emergence of the root, the grains are dried to the water-content of about 20W28%, and roasted by conventional method at 200W 300°C for 3W8 minutes.
