Abstract:

PURPOSE: To prepare sauce which can be preserved stably wihtout lowering the qualities even under refrigerating or freezing conditions, by slowly freezing a sauce, and thawing and homogenizing the sauce.

CONSTITUTION: A sauce prepared by conventional process, is slowly frozen, thawed, and homogenized with a homogenizer. Preferably after or before the homogenizing treatment, 0.05W0.20wt% of a surface active agent such as monoglycerides, sorbitan esters, sugar fatty acid ester, etc., and/or a polymeric polysaccharide such as gum guaiac, sodium arginate, pectin, etc. are added to the sauce.
