Abstract:

PURPOSE: To prepare sweet jelly containing orange fruits, without lowering the taste of the oranges and the concentration of vitamins, by adding crushed orange fruits to jelly, heating the mixture slowly, and quenching in a container.

CONSTITUTION: Fruits of oranges, e.g. tangerines, are crushed, and mixed to an agar solution containing sugar. The mixture is boiled down over a slow fire, added with starch syrup, poured into an orange-shaped container, and quenched. By this process, an orange-shaped jelly having the taste of the orange can be prepared without lowering the nutritive value and vitamins of the orange.
