PURPOSE: Special filtration processes are included before the aging and bottling processes, further aging is effected under sterile conditions to produce the titled draft vinegar of good taste which is storable for a long period of time.
CONSTITUTION: Cereal grains are subjected to saccharification, alcohol fermentation and acetic fermentation. Then, the product is subjected to previous filtration (preferably though kieselghur layer and porous clay layer or repeatedly kieselghur layers, then fine filtration (preferably through membrane filter with fine pores of 0.1W0.5μm diameter to give sterile solution. Then, the solution is stored under sterile conditions for several days to effect aging and the composition is suitably modified. The solution is subjected again to previous filtration and fine filtration, then bottled in individual vessels under sterile conditions to give the objective draft vinegar without heating.
