Abstract:
PURPOSE: To provide tea extracts, which is improved in preservation stability and can be effectively utilized for instant tea drink without getting muddy at the time of cold preservation, by adding oxidase or the like to aqueous tea essence, incubating it and processing it later on specified conditions. CONSTITUTION: Oxidase such as glucose oxidase (it is preferable that its quantity to be added is 1500 to 3750 active unit per soluble tea solid for 1 g in the tea extracts) and tannase (it is preferable that its quantity to be added is 0.25 to 25.0 active unit) are added to the condensed aqueous tea extracts, this obtained extractant is heated and incubated inside an incubator 23 at 21.1 to 48.9 deg.C for >=30 min, and unsoluble solids are separated from the incubated extracts by centrifugal separation 27, so that the objective tea extractant can be obtained.
