Abstract:

PURPOSE: To obtain contamination-free frozen noodles, by activating wheat flour with grown electron ions, and making the flour to noodles using water activated with clinobutyrol zeolite and treated with electron ions, and natural salt.

CONSTITUTION: Wheat flour is treated with grown electron ions generated by irradiating air with electromagneic radiations having longer wavelength than the visible light. Separately, water in a tank is activated by adding clinobutyrol zeolite, and treated with electron ions in a manner same as the above treatment. The water is added with natural salt, and the above wheat flour is kneaded with the solution and made to noodles. The noodles are boiled, steamed or fried in oil, and pakaged and frozen. The frozen noodles can be served by immersing 4W5 times amount of hot water for about 5min, and cooking the thawed noodles.
