Abstract:

PURPOSE: To obtain a roasted frozen meat giving the same taste and palatability as those of directly roasted raw meat, by forming a roast layer having an arbitrary thickness on the surface of meat and freezing the meat, thereby preventing the exudation of inner meat juice with the roast layer.

CONSTITUTION: A piece of edible meat 1 cut to specific thickness and size is placed on a hot plate for a prescribed period or passed through a hot chamber to form a roast layer 2 having an arbitrary thickness on the surface of the meat. The processed meat is stored in frozen state.
