Abstract:

PURPOSE: To obtain a preventing agent for blackening of crustaceans capable of safely and effectively preventing the blackening in place of a sulfite and maintaining the flavor thereof, etc., good and a method for preventing the blackening.
CONSTITUTION: The preventing agent for blackening of crustaceans contains a sugarcane extract, sucrose derived from the sugarcane or cellobiose. The method for preventing the crustaceans from blackening comprises dipping crustaceans in a solution of the preventing agent for the blackening.
