Abstract:

PURPOSE: To prevent aging of a food containing a starch by adding an aging inhibitor containing trehalose.
CONSTITUTION: An aging inhibitor (a glycerol fatty acid ester, a sorbitan fatty acid ester, a sucrose fatty acid ester, etc.) containing trehalose is added to a food containing a starch. The trehalose content of 0.01-10 wt.pt. in 100 wt.pt. of the food containing the starch is sufficient.
