Abstract:
PROBLEM TO BE SOLVED: To provide a method for preventing the heat degeneration of a milk and a milk product without affecting the palatability of them. SOLUTION: This method for preventing the heat degeneration of a milk and a milk product is to add 0.1-10.0% sugar alcohol to the milk and the milk product for blocking free sulfhydryl groups in a milk protein so as to prevent the heat degeneration of the protein.
