Abstract:
To provide a processed cheese-like food having improved thermostability.SOLUTION: A processed cheese-like food comprises natural cheese, molten salt, egg white and modified starch. Relative to total mass of the processed cheese-like food, a cheese content is less than 51 mass%, and relative to the total mass of the processed cheese like food, 0.1≤X≤1.0 (formula 1) and 0.8≤Y≤7.0 (formula 2) are satisfied where X denotes a content (mass%) of the egg white in dry mass and Y denotes a content (mass%) of the modified starch in dry mass.SELECTED DRAWING: Figure 14
