To provide a processed food containing gold kiwi fruit, having excellent flavor, taste, palatability, appearance, and the like, and enabling the cutting of the sarcocarp without collapsing the sarcocarp.
The ripeness of a harvested gold kiwi fruit is controlled in after-ripening stage to attain an average hardness of 0.9-1.6 kg/cm2, a sugar content of ≥13° and a color tone of 100-103° in terms of hue angle. The processed food containing gold kiwi sarcocarp is produced by using the freeze-dried sarcocarp of the gold kiwi fruit as an ingredient. This invention further provides the processed food of the gold kiwi sarcocarp wherein the sarcocarp stored in frozen state is obtained by freezing after cutting the sarcocarp to a proper size, and a frozen sweet or yogurt compounded with the processed pulp food are also provided.
