Abstract:
PURPOSE: To obtain a processed food of melon containing a melon component and a carrot component, having no change of fragrance caused by thermal sterilization during processing, no emission of an offensive smell, no change of color and no fading during preservation.
CONSTITUTION: Thus processed food of melon contains a melon component of such as Yubari king, Tokyo king, prince melon, honeydew melon, etc., and preferably 0.1-40.0wt.% of a carrot component such as a carrot juice.
