Abstract:

PURPOSE: To utilize chicken as a large-sized lump of meat e.g. for beefsteak use, by pressing lumps of chicken with a press to obtain a large compressed flat meat.

CONSTITUTION: Lumps of spring chicken are pressed with a press to obtain a large compressed flat meat, or lumps of culled chicken are heated moderately in a rotary iron drum heated externally with a burner, etc. to obtain a heat-treated meat lumps, which are pressed with a press to obtain a flat meat lump. The flat meat lump is dipped in a seasoning liquid, dried in a dryer, passed through the gap between a pair of press rollers, roasted with a roaster from both sides, and cut to chips.
