Abstract:

PROBLEM TO BE SOLVED: To provide a method for processing into dried persimmon, capable of realizing good quality, large amount of drying and shipping within this year by carrying out irradiation of persimmon with far-infrared rays and immersion of the persimmon into hot water as pretreatment to eliminate residual amount of sulfurous acid and subjecting persimmon to drying treatment with an oil stove equipped with far-infrared radiation function.
SOLUTION: Harvested persimmon is subjected to pretreatment with far-infrared ray irradiation in order to retain freshness of persimmon and the persimmon is subjected to additional agent and the skin thereof is peeled and the persimmon is subjected to hot water treatment and natural drying once and many ranges 15 are hung down in a region covered with a reflection sheet 23 having uneven reflecting surface and vent holes and subjected to heat treatment with oil stove having far-infrared ray radiation function. A material to be dried is heat-dried by radiation energy of infrared rays generated by heating of a ceramic cylinder which is an infrared ray radiation element arranged in the inside of the radiator in a vaporizing forced convection current shaped oil stove and convection current by burner combustion. The material is heated at 35-40°C for 24 hr at first day and removal of dew condensation is carried out for half day to a day from the second day to reduce water content to 60% and remove the astringency and then, dry-treatment is carried out for 5 day at 20-25°C.
