Abstract:

PROBLEM TO BE SOLVED: To obtain an acidic glycide or an acidic glycide-related compound useful for a food material or food itself as a souring agent and a calcium carrier, etc., by reacting a glycide (except glucose) and/or a glycide-related compound with glucose oxidase.
SOLUTION: This acidic glycide or its related compound is obtained by reacting a glycide (monosaccharide, oligosaccharide, etc., except glucose) and/or a glycide-related compound (sugaralcohol, glutaraldehyde, etc.), with glucose oxidase. The reaction is generally conducted at 30-40°C for 12-48 hours and preferably at pH of 3.5 in the case of an acidic sugar and at pH of 7.5 in the case of a neutral sugar and an amino sugar.
